Below are some of the products I developed for some of the world’s best-known brands.
With every new project, my initial goal is to create products that you eat with your eyes. Whether it’s a simple honeycomb-studded chunky bar or an otherworldly chocolate bite swirling with cosmic colours and bursting with fruit, quite simply it has to look fantastic before your tastebuds get to work. The eating experience then has to deliver on this visual promise with bold or subtle, delightful and exciting texture and flavour profiles.
PRESTAT
Prestat created its first truffle in 1902 and is a Royal Warrant Holder, using time-honoured recipes and operating an ethical supply chain.
I created these speciality truffle products while at Prestat. Sold in Liberty, Harrods, Fortnum & Mason and other distinctive stores.
East India Company
Products created for East India Company as part of their Fine Food offering.
Selfridges & Co
These products for Selfridges were created as a result of a honeycomb product I had been working on. They formed part of Selfridge’s popular range of Food Hall confectionary.
BAFTA
While at Prestat, these chocolate BAFTA masks were developed and created as gifts for event attendees.
Rococo
Working with Rococo Chocolates, I supplied the ‘honeycomb crunch’ that formed part of their luxury chocolate bar range.
Bespoke creations
The chocolates below are created with both hand-decorated and airbrushed techniques, using coloured cocoa butters. They are a combination of caramel-filled and real fruit purée-filled pieces which are both vegan and kosher.
Chocolate Santa
This is an example of what can be achieved with conventional chocolate moulds. The highlights were created using white chocolate .
Honeycomb
I spent many months developing and perfecting a light, airy honeycomb, with a rich honey taste, enrobed in chocolate .
